Chillies & peppers

I've had an excellent   crop of chillies and peppers, some are still green though is it too late to expect them to ripen?

    depends where you're growing them. If it's outside in the UK, then definitely yes. Indoors with some heating or in a warmer climate, there's still time. You can eat them when they are green - some chillis may have less heat than when they are red/purple, but still perfectly edible

    They are in an unheated GH, I usually dry them but have only dried ripe one's.

    Do green chillies dry ok and keep well?

  • I doubt it but they will both freeze well.  I just open-freeze and don't bother with blanching.
