Walnuts - when to pick

Hi All, I've just moved into a new property. I have quite a few walnuts in my walnut tree in the garden but don't know anything about when to pick them. I was told by the previous owners to pick them end of July and then dry them in the house. However, they still look very green and 'raw' so wondering when is the best time to pick them and how to dry them? Can anyone give any advice? I want to try and get them before the squirrels come around. Thanks!

I love pickled walnuts - which have to be picked earlier before the shell has formed. This is a lovely recipe for sweet pickled walnuts, which is a little bit unusual .

The other thing you have to do is pick them before the local squirrels get wind of them.
Otherwise, they will strip your tree in the blink of an eye.
