Looking forward to Winter

I love my echinacea but lose quite a few every Winter. As we live in Dorset I think the wet rather than cold weather is the problem. I am thinking of using some sort of mulch and covering individual plants with flower pots. What sort of mulch would be appropriate? I know a heavy mulch isn't recommended - but could I use bark chippings?
