Spinach for winter harvest

Hello

I am new to vegetable gardening but really enjoying it, even though I am sure I have made many many mistakes

The spinach sown so far has been harvested for salad leaves and has started to bolt. I'm hoping to sow some to ensure that we get some spinach over winter also.

We have the Apollo variety and live in London

When is best to sow to leave the crop so its matures and can be cooked over winter?

I don't grow Apollo - what I do grow is Spinach beet, sometimes called Perpetual Spinach - it tastes like spinach but looks more like Swiss Chard and is grown the same way - you can sow it about now and it will yield throughout the autumn and winter - it is hardier than spinach and stands up to the winter weather better, which is why I grow it.
