I have recently dug up all my garlic and discovered that they are green. I used some last night and they tasted O.K. Are they safe to use-unlike potatoes- and why are they green instead of white? They were planted at the usual depth.
Green garlic usually means that it's immature. Absolutely fine to eat and regarded as something a bit special (lots of recipes online) but it's unlikely to store well.
Did you harvest it too soon? When was it planted?

I planted them in Nov and dug them up at the beg of August as the stalks had all died down. Glad I can still use them.Thanks for your reply..
