New question! What makes rhubarb bolt/go to seed in the middle of the growing season?

I put in new rhubarb crowns last October (2011). They came on very well and I even got some usable rhubarb during the summer/autumn this year.

My question is:- Should I pull out all the growth now that the season is over or should I just let it die back?

I have some lupins in 5" pots (23/9/12) growing quite strongly outdoors.Should I plant them out into the garden at this time of year (NE Scotland) or keep them in the pots outdoors or put them into the greenhouse over winter? Thanks.
