Harvesting Parsnips

Hi everyone, I need some advice. I have a row of parsnips in my raised bed which have grown really well, almost too well, I think. The foliage is at least 50cm high and as it was beginning to topple over, I chopped off a third. What I don't know is, when do I start harvesting them, do I wait until the foliage dies down first?

As they are a winter squash, they should keep OK.

Hi, re celeriac. They need lots of water and potash based fertilizer. It is not advisable to grow them near carrots, fennel, parsnips or parsley. Do not harvest before end October.When the tuber has reached the size of a walnut, remove so much earth around the tuber so as to expose the upper roots. The development of the tubers is stimulated by the drying up of the upper roots.

Can't help you with the beetroot I'm afraid. I grew them once and they were all bitter, so never tried again!

You are a lucky lot. Saw one swallow tail in early spring and one admiral, apart from that only lots of cabbage whites. Even the buddleias didn't attract anything much this year, not many bees either, despite the hot summer.
