Self-blanching and green celery varieties have removed a lot of the hard work of trenching, and made celery crops available from mid-summer onwards. Plants are grown on the surface, self-blanching varieties producing pale stems without special treatment, while green forms such as 'Victoria' have fine flavour and succulence without any blanching at all. They are not very hardy and should be used up before serious winter frosts - or they may be grown in a cold frame or tucked up with straw to keep them safe well into the winter.
