Endive has a slightly bitter taste and is often blanched to make it sweeter. It is used in Europe, where it is shredded and added to salads or cooked. It is a cool-season salad vegetable as high temperatures increase the bitter taste. Sow seeds outdoors from April to July to use in autumn and winter. For blanching, choose nearly mature leaves and cover with a pot or plate to exclude light.
