Although popularly regarded as immature marrows, courgettes need to be smooth and tender-skinned, and not all marrows are suitable for courgette production. Special varieties have been developed, all bushy types and yielding numerous small fruits which are green, striped, white or spherical, or bright gold as in 'Gold Rush'. They are very tender plants, and are sown outdoors under jam-jars or cloches for protection, or indoors for earlier plants transferred outside after the last frosts. Cut fruits regularly while small. The bright yellow flowers are also edible.
