Eryngium variifolium is a compact sea holly, bearing small spiky flowers on sturdy, upright stems from July to September. It looks wonderful in gravel gardens and large herbaceous borders. The small flowerheads last well when cut for use in arrangements, and can also be dried.

For best results grow Eryngium variifolium in free-draining soil in full sun. Keep away from the edge of a border if children are present because the spines are very sharp.
